It’s my party!

If you have never heard of Milk Bar Bakery you need to start your Googling now! I discovered it from watching Netflix – Chef’s Table: Pastry, Episode 1: ‘Christina Tosi’.  Christina is my spirit animal! Feisty, sweet and full of fun! She truly is inspirational.

I decided for my birthday this year to recreate her bakery favorite – Birthday Cake – as a treat to myself. HUGE DISCLAIMER – I have never liked funfetti cake. There is something about it that just isn’t my style, but who could resist the bright colors of sprinkles – and it has a MILK CAKE SOAK and CAKE CRUMBS! So Happy Birthday to me!! I decided to go all in and recreate her colorful, sweet and fabulously fun cake.

Christina uses clear vanilla extract in her recipe, which she states gives the cake and frosting that boxed mix and canned frosting flavor, but homemade. I do agree with her that it gives that “extra” over-the-top vanilla flavor that is reminiscent of a box mix, however, this is WAY BETTER than a box mix and canned frosting. SO MUCH BETTER!

I looked over the ingredient list and had most items at home, but I did not follow the recipe to the letter. The recipe is a little long in how they have it written, as it includes assembly instructions, but it’s well worth the read to get to the “cake” of the recipe.

I eventually decided to make this batter into cupcakes so that I could share at work! They got rave reviews! I made a double batch of cake, which made 25 cupcakes, and a double batch of frosting, and I had six cupcakes that didn’t get frosted. I would definitely triple the frosting for cupcakes – as this cake is a “naked” frosted cake, so there isn’t a lot for piping – which is my favorite way to frost cupcakes.

Making cupcakes is less time intensive as they cool quicker and you don’t need some of the extras – acetate and a cake ring. Since I didn’t have all the ingredients, I made do with what I had, and it didn’t disappoint, so don’t let laking a few ingredients or hardware items stop you from trying something NEW. I didn’t have citric acid, grape seed oil and glucose, so I used light corn syrup instead of glucose and vegetable oil instead of grape seed. I omitted the citric acid.

I LOVE the crunch that the cake crumbles add to this cupcake, and the cute and simple decoration they provide! This cake and frosting really ticks all the boxes for me! It’s a soft and moist cake, with the sprinkles giving it a slight crunch of texture. The frosting is smooth and slightly tangy, and we’ve already given much love to the cake crumbles.

I highly suggest making this recipe just because – it won’t disappoint! Don’t let the recipe name “Birthday Cake” keep you locked in for baking it just for a party. Make this cake just because you want to smile or put a smile on someone else’s face!

Take 2

One of my very, very good friends had a birthday recently and I knew I had to make something special for her and that it wasn’t going to be a cake with frosting. It has been pretty snowy and cold so I figured I would go with something bright and citrusy to celebrate her birthday. I settled on a lime bundt cake. It looked amazing after it was done, but the flavor fell flat.

I wasn’t impressed with the batter when I was making it, but I wasn’t about to waste it – so I brought it into work anyway. I kept saying – this isn’t going to taste good, and I was right. For all the lime zest and juice that I added into the batter it tasted like a flavorless cake. The glaze of lime zest, juice and sugar was the only part that had flavor – talk about disappointment.

So, take 2, I decided to make her a cheesecake. A UNICORN CHEESECAKE. I took my prized cheesecake recipe and divided it into four bowls and added Wilton gel colors – pink, purple, yellow and blue. I gently spooned half of each color onto the bottom in four quadrants and then gently swirled it with a butter knife. I then took the remaining halves and put them in opposite quadrants and gently swirled them again to ensure maximum color variation without muddling the colors too much. The result was a colorful and amazing looking cheesecake that satisfies the Lisa Frank in all of us!

This technique can be used with no bake cheesecakes also and it really is amazing looking!

Even at our best we can sometimes not be pleased with how something turns out. Don’t let it get you down. Dust yourself off and go for something bolder!

 

For others enJOYment!

I was blessed these past few weeks by friends. I was asked by three people to created sweet treats for them to pass on to others. First it was Finding Dory cupcakes for a friend’s sweet daughter’s birthday party, then a celebratory cake for a local business celebrating 68 years in business and then a birthday cake for a husband for his 30th!

It is honestly the little things in life that I feel give back the most joy! I was honored and flattered that people took time to find me and ask me to make these fun treats!

IMG_1315First it was a red, white and blue swirled vanilla cake frosted with a simple vanilla buttercream, decked out with a fondant and buttercream logo.

14051757_529241247282908_4703062274308682897_nSecond was 24 Finding Dory cupcakes – 12 chocolate, 12 vanilla, frosted with vanilla buttercream, topped with cute candy decorations (Pop Rocks, Starburst coral and fondant seaweed, and sticker characters from the movie.

14089098_532174600322906_2598572795207425712_nThird was a chocolate and peanut butter explosion cake! Chocolate cake frosted with peanut butter buttercream topped with chocolate ganache and chopped up peanut butter cups.

I was asked recently if I get joy out of baking simply for the act of baking or do I get joy out of the happiness it brings to others. It’s both. I love how I can get lost in baking like I can in a good book. It clears my head, sets my soul at ease and brings my heart all kinds of happiness. I also love the look on someones face as they bite into something I have made them that makes their taste buds do a happy dance. So if you are having a bad day do what brings you joy!

Key Lime Pie Cupcakes

Sometimes you crave a flavor combination. Sometimes that flavor combination is known for a specific dessert already. Sometimes you want the flavors but not the dessert they were “intended” for. Hence why I decided to make Key Lime Pie Cupcakes for the other half of my brain as her birthday treat!! I love Key Lime Pie, but I didn’t want to make a pie, and as with most birthday treats for each other we like to experiment. So I decided I would make Key Lime curd to fill cinnamon cupcakes and top them with a delicious Fluff buttercream. These are definitely going into my recipe book as they were not only a hit, but a refreshing summertime treat! If you love Key Lime Pie, you will love this spin on a classic.

1/2 c. fresh squeezed Key Lime juice at room temp.
1 1/2 c. sugar
1 stick unsalted butter at room temp.
2 ex. lg. eggs at room temp.
1/8 tsp. salt

Remove the zest of your limes with a zester. Put the zest and sugar into a blender and blend until zest is finely minced and mixed with the sugar. Juice limes to make 1/2 cup and set aside. With a mixer, cream the sugar mixture and butter. Add eggs one at a time scrapping the bowl after each one is added. Add lime juice and salt and mix until combined. The mixture will look separated, which is fine. Put mixture into a medium sauce pan and cook over low heat, stirring constantly, until it has thickened enough to leave a path when you scrap the back of a coated spoon. Pour into a bowl and press plastic wrap down onto mixture to avoid a skin from forming – place in fridge to cool and store until use.

I debated on using my vanilla cake recipe and adding cinnamon, but I decided to go the the web and try a new recipe out, since I was experiment with flavor. I used a Cinnamon Vanilla Cupcake recipe by LizP (see recipe and instructions here: http://www.food.com/recipe/cinnamon-vanilla-cupcakes-439272) that I found on food.com. This created a dense almost muffin-esque cupcake. This was good for the curd filling, as it held up nicely to the extra moisture. This made 12 cupcakes in large cupcake liners. I also went with 2 tsp. of cinnamon to really give it that flavor.

For the Fluff Buttercream:
2 c. butter, softened
2 1/2 c. powdered sugar
1 13 oz. jar of Fluff
1 tsp. vanilla extract

Cream butter in electric mixer until light and fluffy. Gradually add in powdered sugar. Add in Fluff and vanilla, and mix until combined. Put into pipping bag for later use. I kept it on the table so that it would be room temp. for easier piping onto my cupcakes. This frosting is prettier when piped versus using a knife or small offset spatula due to it’s consistency.

13095975_505734042966962_3414481367897242628_nAfter letting my cupcakes cool, I used a large piping tip to hollow out the center of my cupcakes to make a good size whole for the curd to go into. I then piped a generous amount of frosting on top and sprinkled with gold luster dust for a pop of color and pizazz. These are birthday cupcakes after all!

‘Tis the season!

IMG_1472 (1)My oldest turned 12 a few days ago. After talking about Christmas and trying to make present wish lists, we got on the topic of how much stuff we really have and how a lot of it doesn’t get used. We are those parents that have in years past gone through all the girls things and gotten rid of stuff to make room for all the birthday and Christmas presents that would make their way into our home. So, long story short, my oldest daughter decided for her birthday she wanted to have friends come over and watch a movie, play, eat popcorn, candy and cake (of course it had to look like a box of popcorn!), and just have a fun time. She also decided that she didn’t want her family and friends to give her gifts for her birthday. She wanted them to give her money, that she would then purchase gifts for The Angel Tree at our local Walmart. So she called her grandparents and told her request for her birthday and we made sure on all her invitations for her friends to let them know she didn’t want presents, but for them to help her in making her birthday wish a reality.

IMG_1479 (1)After one busy day preparing, one evening full of laughter and giggles, she came away with $280 graciously given by family and friends to spend on others for Christmas.

IMG_1471 (1).JPGThe next day we put out the invite to join us shopping for The Angel Tree and thankfully one of her friends was able to go! She and her friend picked out several tags and we went on the hunt to find the items. The first tag the girls saw I think really make an impact on them – it was for a Christmas dinner for a family of four. My daughter was so saddened that a child’s wish for Christmas – instead of cool toy – was merely a family dinner. They each grabbed one. They were able to purchase cologne, many toys, a car seat, a children’s play kitchen, two gift certificates for Christmas dinners and a child’s “couch” that unfolds to become “bed.” The entire time we were in the store, not once did they look at other toys on the shelves or make comments about items that they would like or want. The mission was clear – give to others.

IMG_1475 (1)At the register Kailee was proud to pay for all the items in their very full cart. I realized at check out that I had forgotten to throw a roll of tape in my purse so that we could attach the tags to each gift. I asked they clerk if she thought the service desk would lend us tape and was assured they would. As we stood in line at customer service a clerk came over and asked if we had a few items for the Angel Tree because she could help us with them. Her mouth dropped when she was told that the entire cart was for The Angel Tree and Kailee explained about her birthday request. The clerk immediately gave Kailee a big hug and thanked her and her friend, Olivia, for being so kind-hearted. We then went to pick up a few groceries and while we were in line paying for my items, the same clerk came up and asked to borrow the girls. They followed her back to the service desk where they were praised for their good deed by several employees – it truly was a group effort that made this possible!

It’s that time of year … birthday’s galore!

1264684_10101235834868869_552775041_oWe have a lot of family birthdays from September to February. My little family has birthdays in September, October, December and February. The girls always like to pick out what they want for a cake … do you blame them?? That’s half of the birthday FUN! Their dad doesn’t care what he gets, as long as it contains SUGAR. The girls love coming up for ideas when it comes to his cake. If it’s homemade then they usually get their hands dirty making and or decorating it.

The girls always challenge me with their fun and creative ideas for their birthday cakes. One year Kailee wanted strawberry shortcake (such a good idea!) and everyone loved it! Paula Deen has an excellent shortcake recipe.

225882_889340826749_315394_nKeianna wanted a chocolate and pickle cake – yes pickle! I thought outside of the box and made candy melt “pickle” chips … no pickles were hurt in the making of her cake. Although I did find a yodeling pick at Bullmoose Music to place on top.

1504540_10102077259122919_4348964921899950437_nThen one year Kailee wanted to get an ice cream cake from Dairy Queen, but she wanted it to be an ice skating rink – like the one under Grama’s Christmas tree each year. So I found ice skating penguins and some neat clear illuminated candles for the top. Cute, fun and just what she wanted!

860999_10100889439383199_1803405043_oKeianna’s next birthday, it was requested to have a doughnut cake. Only she didn’t want doughnuts in the cake – it could only look like one!

There have been many times where their requests don’t quite come out as planned. Like when Kailee wanted a rainbow layered cake and once assembled and frosted it ended up falling in every direction and onto the floor hours before her party. They don’t tell you in all those fun rainbow cake posts that the food gel needed to color the layers so vibrantly in a 1/2 box of mix makes the layer very, very, very unstable. Lesson learned. Kailee ended up with rainbow cupcakes instead. Just a tasty and very cute.

My kids know I love to bake and they love eating what I make, however, it I don’t go “baking snob” on them if they want something store bought or made by someone else. It’s their birthday and they get to call the shots. Cake decorating is a talent I haven’t mastered by any means, but cooking with love I have down and can do with my eyes closed.
