PB&J Bites

I give credit to the other half of my baking brain (Mariza) for this post. She dug into the freezer in our break room and pulled out these bite-size balls of goodness. I was hooked. It was like eating a PB&J cookie dough. Now, I have to state that I am one a very few that do not like peanut butter and chocolate together – I know, I know – I am crazy for thinking this apparently. I like my peanut butter with jelly or celery. So these were perfect for me (although they do have white chocolate chips – but my school of thought is that white chocolate isn’t really chocolate at all, so I am good!)

I had to have this recipe! I G-chatted her immediately to ask for it. I love that we both know to wait for the, “but I did this to it” statement before actually looking at the recipe. We are baking soul mates. She is my go to for “what can I substitute” and “do you think this would taste good” or my favorite – “Oh my god! This is amazing and you have to try it.” True to Mariza fashion she told me her edits, and I loved that this was a one bowl and her version only had 7 ingredients ( I omitted the vanilla) – all of which I had in my kitchen at home – AND DID I MENTION THESE ARE NO BAKE!

These are the dried cranberry version!

These little bites are perfect for a quick snack or on-the-go treat and will please even the fussiest eater. This is also a great recipe for the kiddos to help with! It’s easy and gooey, and fun to mix up. Sometimes life can be messy, but this is the good kind of messy! Let them mix away and lick their fingers afterward. Life’s too short not to lick the spoon – or your fingers – every once in a while!

I call this altered recipe PB&J Bites (you can find the original here: http://allrecipes.com/recipe/239969/no-bake-energy-bites/?internalSource=search%20result&referringContentType=search%20results.) I choose to spilt my batch into two bowls before adding in the dried fruit – this way I could make some with dried cranberries and some with freeze dried strawberries. ENJOY!

Ingredients:
2 cup rolled oats
1 cup white chocolate chips
1/2 cup chopped macadamia nuts
1 cup smooth peanut butter
2/3 cup honey (good quality)
3/4 cups dried fruit

Directions:
Place all ingredients into a large bowl and mix well with a wooden spoon (or large spatula). Once combined scoop out bite-sized portions and roll into ball. Place on parchment or foil lined baking sheet and stick in the freezer to set (about 1 hour). Once set you can try not to eat them all by placing them into a Ziploc bag. If you are not eating these right away keep them in a sealed container or bag in the freezer and take out when needed. Even frozen these can still be bitten into so they make a great last minute go-to snack or party treat!

Salty & Sweet!

CHAOS! A hamster running on a wheel going over and over the same information. It can be something small that just gets stuck in my head and even though the rational part of me knows that between the hours of 11 p.m. and 3 a.m. nothing can be solved (usually), but I still dwell. The remedy usually comes in the form of using my hands to create a delicious treat. It soothes my soul, quiets my mind and gives me peace – even if just for a few hours.

I knew this week that I had been craving something salty and sweet – not just salted caramel, but I wanted MORE! Since I already had pretzels and kettle corn, and chocolate, heavy cream, caramels, sweetened condensed milk, butter and more – I knew I could bang out a batch of cupcakes in no time. The creative team at my work has been slammed the past few weeks. They bust their asses on a daily basis and are asked for more favors than most people I know in our work place – they deserve the enjoy my salty and sweet treats!

For these cupcakes I made a basic chocolate cupcakes from Betty Crocker, only I made them with dark chocolate cocoa powder. You can also use a box mix – THERE IS NO SHAME IN CHEATING WHEN IT COMES TO BAKING/COOKING! I filled them with a basic and quick salted caramel (consisting of melting 2 bags of Werther’s soft caramels and 1 can of sweetened condensed milk, and adding crushed sea salt to taste) and topped them with chocolate ganache (1 bag of dark chocolate chips and 1 sm. container of heavy cream – melted until smooth. I let this batch of ganache sit in the fridge to cool and whipped just before it set so it had the consistency of mousse rather than frosting). Then came the fun part – I broke up a few small pretzels to top half and opened a bag of Smartfood Kettle Corn mini bag to top the other half.

Sometimes it is the littlest and easiest detail that really makes things look like you slaved FOREVER on something that really took less than an hour. Google Images can provide you some great ideas! Put in something simple  – chocolate and caramel or brownies and cookie spread or fruit and chocolate. Skim through the images and see what catches your eye! A lot of times things only look detail or hard – don’t just a book by it’s cover. Don’t just overlook something because you think it my take too long or be too hard – you just never know what you might be missing!

 

 

THREE INGREDIENTS!

Whomever thought to crush cookies to make them in to fake truffles is a genius! I mean come on! Three ingredients and the short time of creating such deliciousness can’t be beat!

I may have gone a little over board on buying Girl Scout cookies this year. Who am I fooling .. I do it EVERY year! I tell myself that I am just being helpful and kind by buying so many, but really I just love me some Thin Mints and Carmel de lites (formerly known as Samoas). So of course I receive 3/4 of the boxes I have ordered and decide it is time to go on a diet because I obviously love to punish myself and make dieting even more hard than it already is!

I used one box of Thin Mints to top some delicious brownies that I slathered in chocolate ganache for a get-together at a friends house a few weeks ago. Then it was an co-workers birthday, so I decided to finish of my supply of Thin Mints to make Thin Mint Truffles – you can also make these with Oreos, which I believe this idea started (don’t quote me on it though). I added some peppermint extract to my melted chocolate just to give it a little kick – so my truffles actually had four ingredients, but who’s counting!

Ingredients:
2 sleeves Thin Mints
4 oz. softened cream cheese
8 oz. melted chocolate chips or candy melts

Directions:
In food processor add Thin Mints and pulse until fine crumbed. Add in softened cream cheese and pulse until crumbs and cream cheese form a “dough” consistency. Line small sheet tray or plate with parchment paper. Scoop dough out with a teaspoon and roll between your palms into a small ball. Once all dough is formed into balls place in fridge to chill. While balls are firming in the fridge, pour chocolate chips or candy melts into a microwave safe bowl and heat in 2 or 3 – 30 second intervals stirring well between sessions so that you don’t burn the chocolate or candy melts. Also, by stirring throughly you are spreading the heat around which will help melt more chocolate. You don’t want to melt the chocolate completely using the microwave or the chocolate will become too hot and not set correctly. You want the chocolate to be about room temp. – this is “faking” tempering chocolate so that it will set at room temp. Once the chocolate is ready (this is where I added the peppermint extract and stirred it through), remove your truffles from the fridge and start rolling one-by-one to coat. Set back on parchment paper and let set up at room temp – or at least try to – before eating.

Cookie Spread!

IMG_1803I have found two types of people – people who go gaga over cookie spread and those who look at you with a blank stare because they have never heard of it (I know what you’re thinking … how can someone not know what it is!?!). Regardless of which category you fall into it, I have found a recipe to feed your addiction or to start one!

My daughter was home sick on Monday with a stomach virus that has been running amok in our school. She was laying on the couch curled up in a ball watching a movie. I had already done the dishes, tidy up the house, vacuumed and taken down the Christmas tree – don’t judge. Side note: having a fake tree enables me to keep it up longer. I don’t apologize for this by any means … I love to decorate my tree to make it look pretty and the lights on at night is just too pretty to only have up for a few days.  So since I had exhausted my ideas to entertain myself while my daughter was sick I decided to make brownies. I felt slightly bad about this since I knew she couldn’t eat any of the brownies I was going to make, but assured her I wouldn’t bring them to work so that she could enjoy them when she was feeling better.

I had some extra Biscoff spread from Christmas treats that I had been saving for just the right recipe. So I turned to my good friend Google and searched Biscoff spread brownies. There were a ton of different recipes. Blondies made with the spread incorporated, brownies with a Biscoff spread frosting, layered brownies, the list goes on and on, but one photo caught my eye! http://www.biscoff.com/create/recipes/195/fudgy-biscoff-swirl-brownies

Oh my goodness! AMAZING! The brownies are thick and fudge – and moist! The swirled spread on top pushes this one over the edge into a you can’t just stop at one even though they are decedent and delicious! You will not regret trying this recipe!

Sweet Heat

IMG_1625.JPGSometimes you just need to have a quick and easy, but extremely delicious and addictive, dish to bring somewhere – like to the couch when you are binge watching Netflix in your jammies.

This dish is bright in color, smells amazing and tastes fresh and delicious. With only six ingredients this recipe really packs in the flavor! I get rave reviews on this every singe time I make it. Enjoy!

Pineapple Salsa
Ingredients:
2 c. FRESH pineapple, diced – I usually just use one whole pineapple
1/4 c. cilantro, chopped
1/4 c. red onion, finely chopped
1 serrano or jalapeno pepper, finely chopped – I usually remove the seeds and stem
Juice and zest of one lime
1/8 tsp. sea salt

Directions:
Combined all ingredients into a large bowl and toss together. Use immediately or chill until serving time. Great with chips or on fish tacos!

Marshmallow Popcorn

While shopping for a holiday party, my daughter and I were discussing her birthday cake and party. She had decided to have friends over for pizza, a movie, popcorn with candy and cake! We saw cute tall plastic bags that had printing to make them look like old style popcorn boxes and next to them we saw large plastic tubs made to also look like popcorn boxes. Inspiration hit and I knew I had to make a “popcorn cake!”

IMG_1463When thinking about making popcorn for the top I immediately thought of mini marshmallows. I bought a bag and went to work. I took each one and cut the top in a cross hair pattern about a 1/4 to 1/2 way down, which made them look like molars!! Not exactly what I needed for this cake, but who knows what I might need in the future!

IMG_1464I pinched the bottom where it wasn’t cut and twisted which made them puff slightly where it was cut. On some I pulled the cut ends a little more apart to give variation to each “kernel.” Grab a marshmallow, cut, pinch, pull, repeat. Once I had enough to create the illusion of a mound of popcorn, I added a layer of fresh buttercream to the top of the cake to ensure the pieces would stick to the cake. To give it some color I took some yellow gel food coloring and put some in a dish with a touch of water to make it easier to paint onto the marshmallows. I did try the liquid food coloring first, and even with water, it looked more orange than yellow. I randomly picked pieces to color, and the end result was amazing!

Friendship

I hear her laugh and I immediately smile. I can hear the smile in her voice and even if I am not in sight of her, I know her smile is from ear to ear. I love that for every serious photo she takes there are 20 that have some goofy expression or her tongue sticking out. She is one of the most sincere people I have ever met and her hard work and dedication are to be admired. SHE IS THE BEST HUGGER EVER and her freckles … adorable!

When I found out Michele was engaged I couldn’t have been happier for her. She was absolutely glowing. I knew before she started planning that her wedding would be gorgeously planned and stunningly beautiful – she is a graphic designer after all – and I knew she would put that flourish into every part of her wedding planning.

During this time my relationship with Michele grew so much, we became more than just work friends. I went with her to see the wedding gown she had picked out and I watched her transform as she walked out with that gown on. I got to meet her wedding planner and shop for wedding decorations and ideas. My good friend and co-worker, Mariza, and I were asked to put our baking skills to the test; we were asked to bake for the wedding. Michele’s wedding colors were orange and navy blue, so we made blueberry cobbler and peach cobbler. Mariza and I spent several hours one evening testing recipes and coming up with a plan to feed 150+ people cobbler. The night before the wedding we went to Michele’s house and took over her kitchen! There are a handful of times I have made something and really poured my heart and soul into it, and this one of those times.

Mariza and I drove down the coast of Maine with my girls first thing the morning of the wedding so that the cobbler could be delivered to the venue before the celebrations began. We put our heads together and managed to fit many, many dishes of cobbler into the back of Mariza’s Jeep. Since we were early to the wedding and after sneaking peeks of the tent where the reception was being held- it was breathtakingly beautiful and elegant – we decided to wander the roads for a bit. We ended up in Blue Hill and we were pulled into the charming shop of Black Dinah Chocolatiers Tasting Room.

My girls were captivated by the amazing smells as we walked through the shop. There items for sale, along with goodies for sale. Mariza and I each decided on a molasses cookie half dipped in dark chocolate. I never would have thought of this combination on my own. It was amazing. That warm spicy flavor of the cookie, with it’s soft and chewy texture, mixed with the smooth and rich flavor of the dark chocolate. AMAZING! I was hooked.

My relationship with Michele continues to grow, like any great friendship does. Her outlook on life, her zest for enjoying what life has to offer, and her beautiful, encouraging soul has made me a better person. I love laughing with her, swapping random funny photos found on the internet, and watching her grow as a mommy to a beautiful baby boy, with the most adorable curly red hair. Thank you Michele for alway encouraging me and being there to listen. My courage to start this blog and let it take me where it may, is in part from you and your love! XOXO

Betty Crocker Molasses Cookies
INGREDIENTS:
1 c. packed brown sugar
3/4 c. shortening
1/4 c. molasses
1 egg
2 1/4 c. AP flour
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. ground cloves
1/4 tsp. salt
3 tbsp. granulated sugar

DIRECTIONS:
Heat oven to 325°F. In large bowl, beat brown sugar, shortening, molasses and egg with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients except granulated sugar. Shape dough by rounded tablespoonfuls into 1 1/2-inch balls. Dip tops into granulated sugar. On ungreased cookie sheet, place balls, sugared sides up, about 2 inches apart. Bake 13 to 16 minutes or just until set and cookies appear dry. Immediately remove from cookie sheet to cooling rack. After the cookies have cooled slightly I take a bag of dark chocolate chips and slowly melt them down. You can do this in 30 second bursts in the microwave or using a double-boiler on the stove. Just make sure to keep stirring so that you don’t burn your chocolate. Gently dip cookies half way  and place on parchment paper for setting. Try not to eat them all at once!

Chocolate on Chocolate cupcake

My birthday is just around the corner. I honestly don’t keep track of how old I am anymore, but I do know how old the girl’s dad is – so I subtract one from his age and voila, that’s my age. Birthdays seemed to stop being such a big deal for me after high school and then reappeared with importance once the girls were old enough to realize what birthdays are.

During high school birthdays were huge. We had a store near our high school that sold fun decorating items for all types of celebrations. We use to go and buy wired ribbon with stars dangling off and other accessories to make crowns for whomever’s birthday it was. Someone usually brought in some type of sweet too and lunchtime was turned into a mini party for you and your group.

Just like my mom did for me growing up, I now do for my daughters. They get to pick their sweet treat for school to celebrate their birthdays with their classroom. We are very thankful and lucky that our daycare is in a private home, and she always makes sure to make something special for after school snack as well.

Our children are definitely spoiled when it comes to birthday celebrations, but you know what? They so deserve it. Every other year the girls get to have a big birthday party with friends. The off years for those types of parties are full on family fun. The girls pick their dinner and birthday cake concoction. We have family come over for it and hang out. Ever since Kailee was four we have taken her to a show at the local theater for her birthday. We make it a little family event. The girls dress up, we go out to dinner and a show. These are some of my favorite memories, and theirs too.

My kids are amazing and I don’t just say that as a biased mom. I never realized how strict we seemed to be with our kids until they got to be school aged, but in a good way. They have respect for adults, their peers and each other. They are very kind-hearted and caring individuals with tons of love to share. We are constantly told how well-behaved our children are when they go to friends houses or from their teachers.

I am a firm believer that structure and discipline help children thrive to be the best they can be. My kids are examples of this. They love each other very much and are each others best friend. They are very caring little people who want to do good and see the good in this world. They make us proud each and everyday. They are amazingly beautiful inside and out. For this, and so much more, I am extremely grateful.

Chocolate Buttercream Frosting (MY FAVORITE)
6 tbsp. softened unsalted butter
2 2/3 c. confectioners sugar
1/2 c. unsweetened cocoa powder
1/3 c. milk
1 tsp. good vanilla

DIRECTIONS: Cream together the butter and sugar, add in cocoa powder, milk and vanilla. Mix until well combined. Keep at room temp. for easy spreading when frosting.

Betty Crocker’s Bonnie Butter Cake (MY FAVORITE)
1 3/4 c. sugar
2/3 c. unsalted butter softened
1 1/2 tsp. good vanilla
2 eggs
2 3/4 c. AP flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/4 c. milk

DIRECTIONS: Heat oven to 350 degrees. Grease bottom and sides of rectangular pan, 13 x 9 x 2 inches, or 2 round pans, 9 x 1 1/2 inches; lightly flour. Beat sugar, butter/margarine, vanilla and eggs in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 5 minutes, scraping bowl occasionally. Beat in flour, baking powder and salt alternatively with milk on low speed. Pour into pan(s). Bake for 45 to 50 minutes if using the rectangular pan, 30 to 35 minutes if using the round pans, or until toothpick inserted in center comes out clean. Cool rectangular pan on wire rack. Cool round pans 10 minutes; remove to wire rack. Cool completely.  Frost with the above mentioned chocolate buttercream or your favorite frosting and ENJOY! 

Truth, Stigma and Healing

This blog is part of my path to health. I am a hot mess – aren’t we all?  I finally realized at 33 that I am not capable of changing how I handle and/or manage my stress. I have always been hard on myself … ALWAYS. Let’s be real, it needs to stop or I will end up teaching my daughters this bad habit.

I am use to dealing with a million things at once; I am a mom of two, best friend to their dad, who owns his own business, and my job requires me to multi-task in several departments. I have stress on a daily basis. We all have our laundry list of daily responsibilities. I always thought I was good at dealing with stress – I honestly thought this with all of my being.

Then it happened. I had a “melt down.” I was sitting at my desk at work tearing up over something I knew wasn’t my fault. I had been snapped at by someone else (who was obviously stressed out also). I was absolutely dumb-founded. I kept replaying the scene over and over and over in my head. What could I have differently? How did I not know ahead of time this would happen? I shouldn’t have said anything. I am so stupid. And around and around it went. I felt like I was vibrating in my own skin. My ears were pounding and I shaking, I felt like the room was closing in on me and I couldn’t breathe. I know now I was the proud owner of my first panic attack.

I called my doctor’s office and they fit me in the next morning. I was nervous at first. I remember thinking geesh, another ailment. Lets add to the list. I wasn’t ashamed to talk to my doctor about my feelings – he is an amazing doctor. He goes out of his way to help me when it comes to thinking outside of the box in regards to not being able to take any kind of pain medicine. The first thing his medical assistant said to me is “Just breathe, it gets better from here.” Wow! So simple and yet so powerful for me.

I have a hard time releasing control. I am in the school of thought that if you want something done right, do it yourself. Sitting in that room, then and there, many memories flooded back to me of times where I chastised myself over and over for something that went wrong – where I felt I had disappointed someone. I knew in that moment I need to let go and let someone else (my doctor) be in charge.

Fast forward to today. People are noticing a difference. My daughters notice a difference. I notice a difference. There is no shame in needing help, regardless of what it is for, and asking for help is truly the first step – AND IT IS A HUGE ONE! Knowing there is a light at the end of a dark tunnel, happiness and smiling is possible, this is relief that you don’t understand until you have been the opposite. I took what my doctor told me to heart and really listened to what he had to say. “There are three types of people with anxiety and depression that receive medicine to help them. One is someone who takes medicine for a time and gets to a point they don’t need it anymore, kind of like a reset. Two is someone who takes medicine for a time, then goes off of it for a time, then back on for a time, and so on. Three is someone who takes medicine for the rest of their life. Is there a right or wrong way to do this? No. Everyone is different and that means their needs are different. Should you try to define yourself as one of the three? No. Just know that whichever third you happen to be, there are others, and that you are trying your best to help yourself into the light.” So I have chosen to breathe, take time each week for myself and not feel guilty, and do what I do best and love … bake.

Pumpkin Chocolate Chip Cookies
Ingredients:
2 1/2 c. AP flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. pumpkin pie spice
1/2 tsp. salt
1/2 c. unsalted butter, softened
1 1/2 c. granulated sugar
1 c. canned pumpkin puree
1 lg. egg
1 tsp. vanilla extract
1 bag semi-sweet or milk chocolate chips

Directions:
Preheat oven to 350 degrees F. Combine flour, baking powder, baking soda, pumpkin pie spice and salt; set aside. In a med. bowl cream together the butter and sugar. Add pumpkin, egg and vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Add in chips and stir gently to combined. Drop onto parchment lined cookie sheet (I use a 2 tbsp. cookie scoop). Bake for 15 to 20 mins. in preheated oven.

Turn these into whoopie pies! You can make a simple cream cheese or buttercream frosting, or your favorite whoopie pie filling, and you have a double duty recipe!

Memories

I love having deja vu! It is a sometimes frustrating event – trying to figure out when this moment in time happened the first time. Usually, however, I love the thought that this moment was so great the first time that I get to relive it a SECOND TIME, or that possibly I missed something important the first time so I get a chance to catch it the second time around.  Anything can trigger these moments – a song, a word, a smell, a feel … something so small can bring back such HUGE emotions and feelings of a time before.

Reliving moments in my life can sometimes be bitter-sweet, like losing my dad when he was only 34 and I was only 6. I think of him daily without fail, though sometimes it is because I will hear a song or smell something and I am taken back in time – back to the few years that I had with him. I often wonder what life would be like if he were still alive – how different things would be. I know that even though he is not physically here with me he is watching over me and my girls, and that he hasn’t missed a moment.

Brown Sugar Chocolate Chip Cookies

Food has always had a way of transporting me to another time and place, invoking memories of delicious dishes I have eaten or the people who have made them. My mom always made what I now know are called Peanut Butter Blossom Cookies (us kids just called them peanut butter kiss cookies). For the longest time I thought Hershey Kisses only came out around Christmastime, because that is when she made them. My Grama Berta always made celery stuffed with cheese for the holidays and family dinners, and my brothers and I still look for it on the table at holidays. My Grama (my mom’s mom) always makes broccoli casserole, which I love and still request. My girls always ask their Grammy to make sweet potato souffle for holiday dinners, and with me it’s my Brown Sugar Chocolate Chip Cookies.

When people speak of traditions in their families, I think many times we don’t include the food that is made. Whatever the reason for coming together – a holiday, a wedding, a death, a birthday – we include food. Some of these dishes are passed down from generation to generation – a near and dear family recipe, or something we stumbled across or made on a whim and fell in love with. The food we make will help create memories for the ones we love and bring them back in time, reliving memories, keeping traditions alive and sometimes even creating some new ones.
